Provides guidance and leadership to the Kitchen, ensuring compliance to Hotel and CHC policies and to provide quality customer service while maximizing departmental efficiencies and controlling costs alongside the Executive Chef.
Any combination of education and experience equivalent to graduation from College or any other combination of education, training or experience that provides the required knowledge skills and abilities with a minimum of 2 years hotel management experience as an Executive Chef or a Sous Chef. High School Diploma required.
Maintains planned food costs through use of approved weekly food cost budget.
* Establishes and maintains appropriate preparation times for all food ordered.
Controls waste through proper rotation and labeling/dating of all food products.
Trains all F&B staff in ServSafe or other state approved program.
Maintains proper food quality standards through continual training.
Ensures all kitchen equipment is in working order.
Controls department expenses and purchases through proper use of purchase budget.
Controls payroll costs through proper use of CHIPA and its reports.
Adheres to all hotel policies with regards to hiring, disciplinary actions, and required training documentation.
Conducts monthly food inventory and maintains accurate documentation of food cost credits.
Conducts monthly departmental meetings and submits appropriate minutes
Development and costing of all menus.
Delivering a consistent high quality product.
Maintaining all guidelines required in passing of local health inspections.
Cleanliness / Organization of work areas.
